Orange Pear-tini
Serve this special drink at your next cocktail party. Your guests will love how the subtle pear flavor contrasts with the citrusy orange juice.
Ingredients 1 Servings
Pear Puree
2 medium pears, peeled and cut into ½-inch pieces (about 2 cups)
1¼ cups water
¼ cup granulated sugar (see Tip)
¼ cup orange juice
Cocktail
3 tablespoons vodka (1½ ounces)
1 tablespoon Cointreau or orange liqueur ( ½ ounce)
Ice cubes
3 tablespoons club soda (1½ ounces)
Cinnamon stick (optional)
Orange twist and/or pear slice (optional)
Preparation

For puree, bring pears, the water, sugar, and orange juice to boiling in a medium saucepan, stirring to dissolve the sugar. Reduce heat. Simmer, covered, for 20 minutes or until the pears are soft. Cool slightly. Transfer the mixture to a blender or food processor. Cover and blend or process for 30 seconds or until smooth. Strain through a fine-mesh sieve into a bowl; discard solids.
2. For cocktail, combine ¼ cup Pear Puree, the vodka, and Cointreau in a cocktail shaker. Add ice cubes; cover and shake 10 to 15 seconds. Strain the liquid into a martini glass. Add club soda. If desired, serve with cinnamon and an orange twist and/or pear slice.
Tip: We do not recommend using a sugar substitute for this recipe.
To make ahead: The pear puree (Step 1) can be refrigerated for up to one day.
