Lime and Cucumber-ita
Freshen up your margarita with the cool taste of cucumber. You can make it your way, with or without sugar or alcohol.
Ingredients 1 Serving
½ cup chopped English cucumber
1½ fluid ounces (3 tablespoons) premium tequila
1 fluid ounce (2 tablespoons) Triple Sec
¾ teaspoon finely shredded lime peel
1 tablespoon lime juice
1½ teaspoons sugar or sugar substitute (see Tip) equivalent to 1½ teaspoons sugar
1 cup ice
Lime juice (optional)
Coarse salt (optional)
Thin slices lime (optional)

In a blender, combine cucumber, tequila, Triple Sec, lime peel, the 1 tablespoon lime juice, and the sugar; add about 1 cup ice. Cover and blend until cucumber and ice are thoroughly blended and crushed. If desired, rim a margarita glass with additional lime juice and dip rim in coarse salt. Pour blended mixture into a margarita glass. If desired, garnish with thin lime slices.
Tip: If using a sugar substitute, choose Splenda® Granular, Equal® Spoonful or packets, or Sweet'N Low® bulk or packets. Follow package directions to use product amount equivalent to 1½ teaspoons sugar. Variation: Nonalcoholic Lime and Cucumber-ita: Prepare as directed, except omit the tequila and Triple Sec and add ½ cup diet lemon-lime carbonated beverage and ¼ cup orange juice.
