Roasted Mangoes with Brown Sugar Topping
The make-ahead brown sugar topping can be chilled until baking time. Serve this dessert warm and top it with dollops of fat-free ice cream.
Ingredients 4 serving
2 medium ripe mangoes, halved lengthwise and pitted
2 tablespoons brown sugar
2 tablespoons flaked coconut
2 teaspoons finely shredded orange peel
2 teaspoons finely chopped crystallized ginger

Place mango halves in a 2-quart rectangular baking dish. Combine brown sugar, coconut, orange peel, and crystallized ginger in a small mixing bowl. Sprinkle over mango halves.
Bake in a 425°F oven about 10 minutes or until mangoes are hot, and topping just begins to brown. Makes 4 servings.
